DESCRIPTION
A limited release from the craft Daftmill distillery in the Lowlands. Produced from optic barley, distilled in 2009, matured for 15 years in a combination of 19 first-fill ex-bourbon casks and 1 Pedro Ximénez ex-sherry cask and bottled in 2024. Non-chillfiltered, naturally coloured and bottled at 56.3%. (Bottle size 70cl)
OFFICIAL TASTING NOTES
Nose: Undeniably Daftmill with a nose full of the tropical notes we look for and a rich sweetness.
Palate: The palate brings notes of barley sugar and malt, that we have come to enjoy from Francis's distillate.
Finish: A distinct sweet dark fruit uplift on the finish hinting of the light sherry touch. A deep, complex lengthy dram.
Located in the Howe of Fife (northeast of Edinburgh), Daftmill is a traditional farm distillery owned and operated by the Cuthbert family. The distillery only runs in the farm’s quiet periods; mid-summer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley he uses to make his whisky.
