Carpaccio Salsa Verde is a single cask release from the Caol Ila distillery on Islay, by independent bottler Wemyss Malts. All 12 expressions making up the Wemyss Malts Autumn 2017 release were given descriptive names related to their scent and taste. Distilled in 1981, matured in a single ex-bourbon hogshead and bottled in 2017 - making this release at least a 35 year old. Only 274 bottles were produced. Non-chillfiltered, naturally coloured and bottled at 46%. (Bottle size 70cl)

Nose: Surprisingly fresh at the beginning with citrus and lime, then oily aromas, buttered scallops, menthol and gentle smoke of burning wood develop.

Palate: Mouth-filling and heavy - oily for a long time, then slightly mineral, then spicy meatloaf with salt and coriander, served with herb sauce with citrus notes and roasted, green chilli peppers with sea salt.

Finish: Long finish with mild aromas.
